With the summer comes more time at home and with more time at home comes the constant sound of the fridge and pantry being opened by my little ones and the following words, “I’m hungry.”
I am constantly on the look out for fun, easy, and healthy snacks for my kids. One thing that my kids both love is yogurt and fruit. What perfect timing that we went berry picking at the end of last week and got a whole bunch of blueberries?
You can make this with almost any kind of fruit or fruity chunks – blueberries, blackberries, strawberries, peaches, or raspberries. We used blueberries and strawberries this time because they are what we had on hand after the berry picking and it was perfect for Flag Day coming up!
Do you celebrate Flag Day? Do you know what Flag Day is?
Flag Day is June 14th. Although there are references as far back as the late 19th century, but Flag Day as it is today started in 1916. Several towns across the country even hold Flag Day parades. Although it might seem like the little sibling to July 4th, it’s important to recognize and celebrate this important symbol of our country.
Ingredients:
- 16-32 oz Vanilla Yogurt
- 1-2 Tablespoons Honey
- 1-2 Teaspoons Vanilla Extract
- Blueberries
- Strawberries
Supplies:
- Bowl
- Cookie Sheet
- Parchment Paper
- Spatula
- Spoon
Directions:
1. Stir the honey and vanilla extract into the yogurt until completely blended.
2. Line the baking sheet with parchment paper. This makes the yogurt bark super easy to take out once it’s frozen. Otherwise, it will be a battle of epic proportions trying to get the bark off the sheet.
3. Pour the yogurt into the sheet and use the spatula to smooth it so that it covers the bottom. It doesn’t need to be a very thick layer, but thick enough that you can’t see the bottom of the baking sheet through the yogurt.
4. Spread the fruit (blueberries and strawberries in our case) over the yogurt, making sure that they are pushed down into the yogurt.
5. Freeze the yogurt in the baking sheet for an hour or two.
6. Once the yogurt has set, lift the parchment paper out of the baking sheet (it may help to let it sit room temperature for a few minutes) and break the bark into smaller sections. You can then bag this and store in the freezer and eat a little bit at a time.
