There is nothing that screams summer quite like a campfire and roasting marshmallows for s’mores. I saw this guide a few weeks ago asking how you like your marshmallows. I’m definitely between an 8 and 9 on the guide – I like to catch my marshmallows on fire, let them burn for just a second or so, and then blow it out. I don’t want to eat charcoal, but I do like to have it a little harder on the outside, but gooey and melty on the outside.
This snack is a take off of the traditional s’more. Good news is, it doesn’t have any fire involved so it’s super safe for little hands. I first found this snack many years ago when looking for sugar-free desserts to make for my dad who is diabetic. I’ve adapted it to make it more like one of my favorite desserts – a s’more – but that means it’s no longer diabetic-friendly.
This snack is relatively healthy, a fun dessert, and cool for those warm summer evenings. Using graham crackers, cool whip, and chocolate, this healthy summer snack creates a little chocolate-dipped “ice cream” sandwich. Because I didn’t want the kiddos to use a knife, I did the first part of putting the Cool Whip on the graham crackers. I then had Little Mister and Little Miss help me top the sandwiches with the other graham cracker half and dip the sandwiches in the chocolate.
Ingredients:
- Graham crackers, broken into quarters
- Melting Chocolate
- Cool Whip
- Wax or parchment paper
Directions:
1. Lay the graham cracker quarters out on a plate or tray that is freezer-safe.
2. Using a knife, spread a tablespoon or two of Cool Whip on each graham cracker quarter. This needs to be done relatively quickly before the Cool Whip starts to melt. There is a balance of that the Cool Whip can be spread relatively easily without breaking the cracker but not melting and creating a mess.
3. Top each quarter graham cracker with Cool Whip with a second graham cracker to create the “sandwich”.
4. Freeze for at least several hours, but best is overnight. This will allow the Cool Whip to harden and set.
5. Melt chocolate in a bowl deep enough to dip the sandwiches in.
6. Dip one end into the melted chocolate and set on the wax paper. Make sure that the chocolate isn’t too hot that it will melt the Cool Whip. You want it just a little warmer than room temperature.
7. Return sandwiches to freezer for the chocolate to harden.
8. Store sandwiches in the freezer and enjoy as you’d like!
These are perfect for that hot summer afternoon. Have one or a couple – the nice thing is that these are relatively small so you can enjoy one or two without much guilt!
